Not your average Joe

I'm not really sure how to start this post. It's time for the Iron Cupcake Earth challenge again and this month the ingredient to use was coffee. I was very excited at first and unfortunately have had the busiest month ever so I didn't really have time to make anything until last minute.

I love butter cream and I wanted to make some sort of coffee butter cream which I find delicious so I decided that for this challenge I would make chocolate cupcakes filled with coffee infused Dulce de Leche mousse and coffee butter cream! Wow, that's a mouth full isn't it? And since it's February, I decided to decorate them all Valentinesy (yes I decided that was a word!)

The pictures may not be that great but I have to tell you the cupcakes are, you can really taste the coffee and the Dulce de Leche in the filling. And that smooth butter cream, mocha heaven!

I'm truly sorry to say that for this challenge I didn't have a chance to photograph all the steps, I'm barely having a chance posting this and sending in the recipe. Please forgive me. I still hope you vote for me at No One Puts Cupcake in a Corner!!
